Got it booked in on tuesday.

What would happen if i get caught driving it???

Minimum 3 points £60 fine I would guess, may get a warning if you get a decent plod

"Driving without a valid MOT certificate is an offence under Section 47 of the Road Traffic Act 1988, and, although conviction for this offence will not result in penalty points being placed on a driving licence, it carries a maximum fine of £1000. If it invalidates insurance, I would have assumed thats 6 points?

You are allowed to drive it on the way to a previously booked MOT appointment, but you'd better check your insurance to see if you'd still be covered for that.
